“Sight Saving Month” is here, a time dedicated to spreading awareness about eye health and the importance of sight. Many of the who’s who in society welcomed August at SM Aura Premier’s Samsung Hall by attending the second annual Dinner in the Dark, a lavish charity event hosted by Eye Society in collaboration with Margarita Forés, 2016 Asia’s Best Female Chef. Chef Forés’ own father, Dr. Raul Forés was the first to be involved with the Eye Bank Foundation (Eye Society’s chosen beneficiary).

Free-flowing Moët & Chandon champagne and gumamela hibiscus tea paired the pass-around hors d’oeuvres of cherry tomato cups of salted egg spuma and parma ham crisps and potato crisps with chive mousse, salmon roe and lumpfish caviar. These whetted the guests’ appetites for the four-course menu consisting of an antipasto of Parmesan Panna Cotta with organic tomatoes, sweet basil and black olives; followed by the “Gifts from the Seas” featuring pan-seared Philippine sea bass, water spinach, seaweed, capiz scallops, Negros blue crab, bottarga and truffle. The main course, aptly called “Of the Earth,” centered around braised and smoked US short ribs with dark chocolate, porcini, adlai, and heirloom carrot atchara. For dessert, Corn Espuma was served, featuring coconut three ways, Guimaras mango and Philippine rum.

The experience was further enhanced with the aid of blindfolds and “darkness experts”. This gave guests more awareness for the plight of the visually impaired, as well as a wider understanding of the importance of eye care. It wouldn’t be until the end of the meal, when Chef Forés would come on stage to describe the dishes she’s prepared as photos of the food were flashed on a screen.

Apart from the choice food and wine pairings, guests were also shown a video that highlighted the importance of sight, and were treated to a moving performance by the School of the Blind. The night was also peppered with key speakers like Eye Society, Inc. President George Mirani, who gave opening remarks and brought Chef Forés onto the stage. Eye Society, Inc. AVP Neelam Gopwani, discussed the importance of eye health, emphasising its importance in the digital age, and Dr. Leo Cubillan of St. Luke’s Medical Center Department of Ophthalmology who gave the closing remarks.

Interested parties who want to attend the second annual Dinner in the Dark may get two tickets by purchasing a P10,000 minimum in a single receipt transaction at any Eye Society boutique nationwide from Aug. 1 to Sept. 30, 2017.
